- Farro - 100 grams
- Vegetable broth - 500 ml
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Zucchini - 1 small, diced
- Tomato - 1 medium, diced
- Olive oil - 1 tablespoon
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 teaspoon
Steps
- Rinse the farro under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until they begin to soften.
- Add the minced garlic and diced zucchini to the pot, cooking for another 3 minutes.
- Stir in the diced tomato and the rinsed farro, mixing well with the vegetables.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 20 minutes, or until the farro is tender.
- Once cooked, season with salt, black pepper, and lemon juice. Stir in the chopped parsley just before serving.
- Serve hot, garnished with extra parsley if desired.
