Ingredients

  • Farro - 100 grams
  • Vegetable broth - 500 ml
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 teaspoon

Steps

  1. Rinse the farro under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until they begin to soften.
  3. Add the minced garlic and diced zucchini to the pot, cooking for another 3 minutes.
  4. Stir in the diced tomato and the rinsed farro, mixing well with the vegetables.
  5. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 20 minutes, or until the farro is tender.
  6. Once cooked, season with salt, black pepper, and lemon juice. Stir in the chopped parsley just before serving.
  7. Serve hot, garnished with extra parsley if desired.
