Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 5 leaves, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30g, grated
  • Chickpeas - 100g, cooked (or canned, drained and rinsed)

Steps

  1. Preheat your grill or barbecue to medium-high heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt, letting them sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  4. In a bowl, mix together the olive oil, minced garlic, chopped basil, oregano, salt, and black pepper.
  5. Brush both sides of the eggplant slices with the olive oil mixture.
  6. Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, until they are tender and have nice grill marks.
  7. In a serving dish, layer the grilled eggplant and sprinkle the grated Parmesan cheese on top.
  8. Serve with cooked chickpeas on the side for added protein.
