- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh basil - 5 leaves, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30g, grated
- Chickpeas - 100g, cooked (or canned, drained and rinsed)
Steps
- Preheat your grill or barbecue to medium-high heat.
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt, letting them sit for 10 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with a paper towel.
- In a bowl, mix together the olive oil, minced garlic, chopped basil, oregano, salt, and black pepper.
- Brush both sides of the eggplant slices with the olive oil mixture.
- Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, until they are tender and have nice grill marks.
- In a serving dish, layer the grilled eggplant and sprinkle the grated Parmesan cheese on top.
- Serve with cooked chickpeas on the side for added protein.
