Steps
- Preheat the grill to medium-high heat.
- Slice the eggplant into 1 cm thick rounds and place them in a colander. Sprinkle with salt and let them sit for about 15 minutes to draw out excess moisture.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- In a small bowl, mix together the olive oil, minced garlic, black pepper, and balsamic vinegar.
- Brush both sides of the eggplant slices with the olive oil mixture.
