Ingredients

  • Black pepper - 1/4 teaspoon
  • Balsamic vinegar - 1 teaspoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the eggplant into 1 cm thick rounds and place them in a colander. Sprinkle with salt and let them sit for about 15 minutes to draw out excess moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  4. In a small bowl, mix together the olive oil, minced garlic, black pepper, and balsamic vinegar.
  5. Brush both sides of the eggplant slices with the olive oil mixture.
  6. Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until tender and grill marks appear.
  7. Remove the grilled eggplant from the grill and place them on a serving plate.
  8. Sprinkle the torn basil leaves over the warm eggplant and drizzle with a little more olive oil if desired before serving.
