Ingredients
- Linguine - 160 grams
- Fresh mussels - 400 grams
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Dry white wine - 100 ml
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot of salted boiling water, cook the linguine according to package instructions until al dente, then drain and set aside.
- Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
- Add the cherry tomatoes to the skillet and cook for about 3-4 minutes until they begin to soften.
- Pour in the white wine and bring to a simmer. Add the mussels, cover the skillet, and cook for about 5-7 minutes until the mussels open, discarding any that do not.
- Once the mussels are cooked, add the drained linguine to the skillet and toss gently to combine, allowing the pasta to soak up the flavors.
- Season with salt and black pepper to taste, and stir in the chopped parsley just before serving.
