Ingredients

  • Linguine - 160 grams
  • Fresh mussels - 400 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Dry white wine - 100 ml
  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot of salted boiling water, cook the linguine according to package instructions until al dente, then drain and set aside.
  2. Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  3. Add the cherry tomatoes to the skillet and cook for about 3-4 minutes until they begin to soften.
  4. Pour in the white wine and bring to a simmer. Add the mussels, cover the skillet, and cook for about 5-7 minutes until the mussels open, discarding any that do not.
  5. Once the mussels are cooked, add the drained linguine to the skillet and toss gently to combine, allowing the pasta to soak up the flavors.
  6. Season with salt and black pepper to taste, and stir in the chopped parsley just before serving.
