  • Linguine - 200 grams
  • Shrimp (peeled and deveined) - 250 grams
  • Garlic (minced) - 4 cloves
  • Cherry tomatoes (halved) - 200 grams
  • Olive oil - 3 tablespoons
  • White wine - 100 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  3. Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque.
  4. Stir in the cherry tomatoes and cook for another 2 minutes until they soften.
  5. Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly, seasoning with salt and black pepper to taste.
  6. Once the linguine is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the shrimp and tomato mixture.
  7. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  8. Remove from heat, stir in chopped parsley, and serve immediately with additional parsley on top.
