- Cherry tomatoes (halved) - 200 grams
- Olive oil - 3 tablespoons
- White wine - 100 ml
- Fresh parsley (chopped) - 2 tablespoons
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque.
- Stir in the cherry tomatoes and cook for another 2 minutes until they soften.
- Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly, seasoning with salt and black pepper to taste.
- Once the linguine is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the shrimp and tomato mixture.
- Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Remove from heat, stir in chopped parsley, and serve immediately with additional parsley on top.
