Steps
- Rinse the vongole under cold water to remove any sand or grit. Soak them in fresh water for about 20 minutes, then drain.
- In a large pot, bring salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant but not browned, about 1 minute.
- Add the vongole to the skillet and pour in the white wine. Cover the skillet with a lid and cook for about 5-7 minutes, or until the clams open up, stirring occasionally. Discard any clams that do not open.
- Once the clams are cooked, add the drained linguine to the skillet, tossing to combine with the clams and sauce. If the mixture seems dry, add a bit of the reserved pasta water.
