Ingredients

  • Linguine - 200 grams
  • Fresh vongole (clams) - 500 grams
  • Garlic - 4 cloves, minced
  • Extra virgin olive oil - 4 tablespoons
  • Dry white wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for zest and juice

Steps

  1. Rinse the vongole under cold water to remove any sand or grit. Soak them in fresh water for about 20 minutes, then drain.
  2. In a large pot, bring salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant but not browned, about 1 minute.
  4. Add the vongole to the skillet and pour in the white wine. Cover the skillet with a lid and cook for about 5-7 minutes, or until the clams open up, stirring occasionally. Discard any clams that do not open.
  5. Once the clams are cooked, add the drained linguine to the skillet, tossing to combine with the clams and sauce. If the mixture seems dry, add a bit of the reserved pasta water.
  6. Stir in the chopped parsley, lemon zest, and a squeeze of lemon juice. Season with salt and black pepper to taste.
  7. Serve immediately, garnishing with additional parsley and lemon wedges, if desired.
