  • Linguine - 160 grams
  • Fresh clams - 500 grams

  • Garlic - 3 cloves, minced
  • Red pepper flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • White wine - 100 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the clams under cold water to remove any sand or grit.
  2. In a large pot, bring salted water to a boil and cook the linguine according to package instructions until al dente.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant.
  5. Add the rinsed clams to the skillet, followed by the white wine and lemon juice. Cover and cook for about 5-7 minutes, or until the clams have opened.
  6. Once the clams are cooked, stir in the chopped parsley and season with salt and black pepper to taste.
  7. Drain the linguine, reserving a bit of the pasta water. Add the linguine to the skillet with the clams, tossing everything together. If the pasta seems dry, add a splash of reserved pasta water.
  8. Serve hot, garnished with additional parsley if desired.
