Ingredients
- Linguine - 160 grams
- Fresh clams - 500 grams
- Extra virgin olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red pepper flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- White wine - 100 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the clams under cold water to remove any sand or grit.
- In a large pot, bring salted water to a boil and cook the linguine according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant.
- Add the rinsed clams to the skillet, followed by the white wine and lemon juice. Cover and cook for about 5-7 minutes, or until the clams have opened.
- Once the clams are cooked, stir in the chopped parsley and season with salt and black pepper to taste.
- Drain the linguine, reserving a bit of the pasta water. Add the linguine to the skillet with the clams, tossing everything together. If the pasta seems dry, add a splash of reserved pasta water.
- Serve hot, garnished with additional parsley if desired.
