Ingredients

  • Zucchini - 2 medium
  • Telline clams - 300 grams, cleaned
  • Garlic - 3 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced and zested
  • Sea salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Using a spiralizer, create zucchini noodles from the two medium zucchinis and set them aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the cleaned telline clams to the skillet and cover with a lid. Cook for about 5-7 minutes until the clams open up, stirring occasionally.
  4. Once the clams are open, add the zucchini noodles to the skillet and toss everything together. Squeeze the lemon juice over the mixture and add the lemon zest.
  5. Season with sea salt, black pepper, and red pepper flakes if using. Cook for an additional 2-3 minutes, just until the zucchini noodles are slightly tender.
  6. Remove from heat and stir in the chopped fresh parsley. Serve immediately, garnished with extra parsley if desired.
