Steps
- Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until translucent and fragrant, about 2-3 minutes.
- Add the squid rings to the skillet and cook for 3-4 minutes until they start to turn opaque.
- Pour in the dry white wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate.
- Stir in the squid ink and vegetable broth, mixing well to combine. Season with salt and black pepper to taste. Let it simmer for an additional 5 minutes.
- Add the cooked linguine to the skillet, tossing it gently in the sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
- Remove from heat, stir in the chopped parsley, and adjust seasoning if necessary. Serve immediately, garnished with additional parsley if desired.
