Steps

  1. Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until translucent and fragrant, about 2-3 minutes.
  3. Add the squid rings to the skillet and cook for 3-4 minutes until they start to turn opaque.
  4. Pour in the dry white wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate.
