Ingredients

  • Linguine - 200 grams
  • Extra virgin olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh lemon juice - 60 ml (about 1 large lemon)
  • Lemon zest - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, kosher) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1-2 minutes, until fragrant but not browned.
  4. Once the linguine is cooked, reserve about 120 ml of the pasta cooking water and then drain the linguine.
  5. Add the cooked linguine to the skillet with the garlic and oil, and toss to combine.
  6. Pour in the lemon juice and lemon zest, and add the reserved pasta water a little at a time until the desired consistency is reached.
  7. Stir in the chopped parsley, and season with salt and black pepper to taste.
  8. If using, sprinkle grated Parmesan cheese on top before serving.
