- Linguine - 200 grams
- Extra virgin olive oil - 3 tablespoons

- Fresh lemon juice - 60 ml (about 1 large lemon)
- Lemon zest - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional, kosher) - 30 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes, until fragrant but not browned.
- Once the linguine is cooked, reserve about 120 ml of the pasta cooking water and then drain the linguine.
- Add the cooked linguine to the skillet with the garlic and oil, and toss to combine.
- Pour in the lemon juice and lemon zest, and add the reserved pasta water a little at a time until the desired consistency is reached.
- Stir in the chopped parsley, and season with salt and black pepper to taste.
- If using, sprinkle grated Parmesan cheese on top before serving.
