- Green lentils - 150 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Extra virgin olive oil - 3 tablespoons
- Red wine vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Rinse the lentils under cold water and place them in a pot with 500 ml of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender but not mushy. Drain and let cool.
- While the lentils are cooking, prepare the vegetables: chop the cucumber, halve the cherry tomatoes, and finely chop the red onion and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and black pepper to make the dressing.
- In a large bowl, combine the cooked lentils, chopped vegetables, and dressing. Toss gently to mix.
- If desired, sprinkle crumbled feta cheese on top before serving. Serve chilled or at room temperature.
