- Garlic, minced - 2 cloves
- Carrot, diced - 1 small (about 50 grams)
- Celery, diced - 1 stalk (about 50 grams)
- Diced tomatoes (canned) - 400 grams
- Lentils (green or brown) - 100 grams
- Vegetable broth - 500 ml
- Bay leaf - 1
- Dried oregano - 1 teaspoon
- Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried)
- Salt - to taste
- Black pepper - to taste
- Parsley, chopped (for garnish) - 2 tablespoons
Steps
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes.
- Add the diced onion, carrot, and celery to the pot, and sauté until the vegetables are soft, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced tomatoes (with their juice), lentils, vegetable broth, bay leaf, oregano, and thyme to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 25-30 minutes, or until the lentils are tender.
- Remove the bay leaf, and season the soup with salt and black pepper to taste.
- Serve hot, garnished with chopped parsley.
