- Green or brown lentils - 150 grams

- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery to the pot and sauté for about 5 minutes, until softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the rinsed lentils, vegetable broth, bay leaf, thyme, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for 25-30 minutes, or until the lentils are tender and the stew thickens, stirring occasionally.
- Remove the bay leaf, adjust seasoning if needed, and serve hot, garnished with fresh parsley.
