Ingredients
- Lasagna sheets - 6 sheets
- Fresh spinach - 200 grams
- Zucchini - 1 medium, sliced
- Mushrooms - 150 grams, sliced
- Vegan ricotta - 200 grams
- Nutritional yeast - 2 tablespoons
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Tomato sauce - 200 grams
- Fresh basil - a handful, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced zucchini and mushrooms to the skillet, and cook for about 5-7 minutes until softened. Season with salt and pepper.
- In a large pot, bring water to a boil. Cook the lasagna sheets according to package instructions until al dente. Drain and set aside.
- In a mixing bowl, combine the vegan ricotta, nutritional yeast, and half of the chopped fresh basil. Mix well until creamy.
- In a baking dish, spread a layer of tomato sauce on the bottom. Place 2 sheets of lasagna over the sauce.
- Layer half of the sautéed vegetables on top, followed by half of the spinach, and dollop half of the vegan ricotta mixture over it.
- Repeat the layering process with the remaining ingredients, finishing with a layer of lasagna sheets topped with tomato sauce and a sprinkle of remaining basil.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the top is slightly golden.
