Ingredients

  • Lasagna sheets - 6 sheets
  • Fresh spinach - 200 grams
  • Zucchini - 1 medium, sliced
  • Mushrooms - 150 grams, sliced
  • Vegan ricotta - 200 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato sauce - 200 grams
  • Fresh basil - a handful, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the sliced zucchini and mushrooms to the skillet, and cook for about 5-7 minutes until softened. Season with salt and pepper.
  4. In a large pot, bring water to a boil. Cook the lasagna sheets according to package instructions until al dente. Drain and set aside.
  5. In a mixing bowl, combine the vegan ricotta, nutritional yeast, and half of the chopped fresh basil. Mix well until creamy.
  6. In a baking dish, spread a layer of tomato sauce on the bottom. Place 2 sheets of lasagna over the sauce.
  7. Layer half of the sautéed vegetables on top, followed by half of the spinach, and dollop half of the vegan ricotta mixture over it.
  8. Repeat the layering process with the remaining ingredients, finishing with a layer of lasagna sheets topped with tomato sauce and a sprinkle of remaining basil.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the top is slightly golden.
  10. Allow the lasagna to cool for a few minutes before slicing and serving. Enjoy your delicious Vegan Lasagna Verde!
