Ingredients

  • Lasagna noodles - 4 sheets
  • Olive oil - 1 tablespoon
  • Zucchini - 100 grams, thinly sliced
  • Bell pepper - 100 grams, diced
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Ricotta cheese - 150 grams
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Garlic - 2 cloves, minced
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 200 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the sliced zucchini, diced bell pepper, and mushrooms to the skillet. Cook for about 5-7 minutes until softened.
  4. Stir in the fresh spinach and cook until wilted. Season the mixture with Italian seasoning, salt, and black pepper. Remove from heat.
  5. In a mixing bowl, combine the ricotta cheese, half of the grated Parmesan cheese, and a pinch of salt and pepper.
  6. In a baking dish, spread a thin layer of tomato sauce on the bottom. Place 2 lasagna noodles over the sauce.
  7. Spread half of the ricotta mixture over the noodles, then layer half of the sautéed vegetables on top.
  8. Add another layer of 2 lasagna noodles, followed by another layer of tomato sauce, the remaining ricotta mixture, and the rest of the vegetables.
  9. Top with the last 2 lasagna noodles and cover with the remaining tomato sauce. Sprinkle with shredded mozzarella and the remaining Parmesan cheese.
  10. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  11. Allow the lasagna to cool for 5-10 minutes before slicing and serving.
