Ingredients

  • Whole wheat lasagna noodles - 6 sheets
  • Ricotta cheese - 250 grams
  • Fresh spinach - 150 grams
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Tomato sauce - 200 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine ricotta cheese, the cooked spinach, egg, salt, black pepper, and nutmeg. Mix well until smooth and creamy.
  5. Spread a thin layer of tomato sauce on the bottom of a baking dish.
  6. Layer 2 sheets of lasagna noodles over the sauce, then spread half of the ricotta mixture on top. Sprinkle with a third of the mozzarella cheese.
  7. Add another layer of sauce, followed by 2 more sheets of lasagna noodles, the remaining ricotta mixture, and another third of the mozzarella cheese.
  8. Top with the final 2 sheets of lasagna noodles, the remaining tomato sauce, and the rest of the mozzarella cheese. Sprinkle grated Parmesan cheese on top.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  10. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  11. Let the lasagna cool for 5 minutes before slicing and serving.
