Ingredients
- Whole wheat lasagna noodles - 6 sheets
- Ricotta cheese - 250 grams
- Fresh spinach - 150 grams
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
- Tomato sauce - 200 grams
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine ricotta cheese, the cooked spinach, egg, salt, black pepper, and nutmeg. Mix well until smooth and creamy.
- Spread a thin layer of tomato sauce on the bottom of a baking dish.
- Layer 2 sheets of lasagna noodles over the sauce, then spread half of the ricotta mixture on top. Sprinkle with a third of the mozzarella cheese.
- Add another layer of sauce, followed by 2 more sheets of lasagna noodles, the remaining ricotta mixture, and another third of the mozzarella cheese.
- Top with the final 2 sheets of lasagna noodles, the remaining tomato sauce, and the rest of the mozzarella cheese. Sprinkle grated Parmesan cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 5 minutes before slicing and serving.
