Ingredients

  • Kohlrabi - 1 large (about 300g)
  • Ricotta cheese - 150g
  • Fresh spinach - 50g
  • Parmesan cheese - 30g, grated
  • Egg - 1 large
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Peel the kohlrabi and slice it into thin sheets using a mandoline or a sharp knife, aiming for about 2-3 mm thickness.
  3. Blanch the kohlrabi sheets in boiling salted water for 2 minutes, then transfer them to an ice bath to stop the cooking process. Drain and pat dry.
  4. In a pan, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute. Add the fresh spinach and cook until wilted, then remove from heat and let it cool slightly.
  5. In a mixing bowl, combine the ricotta cheese, sautéed spinach, grated Parmesan, egg, salt, black pepper, and nutmeg. Mix well until all ingredients are fully incorporated.
  6. Lay out the kohlrabi sheets and place a tablespoon of the ricotta filling on one end of each sheet. Fold the sheet over the filling to create a ravioli shape and press the edges to seal. Repeat until all filling is used.
  7. Arrange the kohlrabi ravioli on a baking tray lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes, or until the kohlrabi is tender and the filling is heated through.
  9. Serve warm, drizzled with a bit of olive oil and additional grated Parmesan if desired.
