- Canned crushed tomatoes - 400g
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, for garnish
- Parmesan cheese - 30g, grated (optional)
Steps
- Peel the kohlrabi and use a spiralizer or a vegetable peeler to create noodles. Set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the canned crushed tomatoes, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper to the skillet. Stir well and let simmer for about 15 minutes, stirring occasionally.
- While the sauce is simmering, bring a separate pot of water to a boil. Add the kohlrabi noodles and blanch for 2-3 minutes until slightly tender. Drain and set aside.
- Once the marinara sauce has thickened slightly, add the kohlrabi noodles to the skillet. Toss gently to combine and heat through for an additional 2-3 minutes.
