Keto Zucchini Lasagna is a low-carb twist on the classic Italian dish, replacing traditional pasta with thinly sliced zucchini. This flavorful and satisfying meal is layered with rich marinara sauce, creamy ricotta, and gooey mozzarella cheese.

Ingredients
- Zucchini - 2 medium (about 400g)
- Ricotta cheese - 200g
- Mozzarella cheese, shredded - 150g
- Parmesan cheese, grated - 50g
- Ground beef - 200g
- Marinara sauce (sugar-free) - 200g
- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 190°C (375°F).
- Slice the zucchini lengthwise into thin strips, about 5mm thick, and sprinkle with salt. Let them sit for 15 minutes to draw out excess moisture, then pat dry with paper towels.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Season with salt, black pepper, oregano, and basil.
- Stir in the marinara sauce and let it simmer for about 5 minutes before removing it from heat.
- In a mixing bowl, combine ricotta cheese, egg, half of the grated Parmesan, and a pinch of salt and pepper until well mixed.
- In a baking dish, layer the ingredients starting with a thin layer of the meat sauce, followed by a layer of zucchini slices, a layer of the ricotta mixture, and a layer of mozzarella cheese. Repeat the layers until you run out of ingredients, finishing with mozzarella on top.
- Sprinkle the remaining Parmesan cheese on top and cover with foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for about 10 minutes before slicing and serving.
