Ingredients
- Almond flour - 100g
- Cream cheese - 100g
- Egg - 1 large
- Spinach - 100g (fresh or frozen)
- Ricotta cheese - 50g
- Parmesan cheese - 30g (grated)
- Garlic - 1 clove (minced)
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- In a mixing bowl, combine almond flour, cream cheese, egg, salt, and black pepper to form a dough. Knead until smooth.
- Cover the dough with plastic wrap and let it rest for 10 minutes.
- In a skillet, heat olive oil over medium heat, add minced garlic and sauté until fragrant.
- Add spinach to the skillet and cook until wilted (if fresh) or heated through (if frozen). Remove from heat.
- In a bowl, mix the cooked spinach, ricotta cheese, Parmesan cheese, and a pinch of nutmeg. Set aside.
- Roll out the rested dough on a parchment paper until thin (about 2mm thick). Cut into squares or circles (about 5cm in diameter).
- Place a small spoonful of the spinach filling in the center of each dough piece. Fold over to form a tortellini shape and seal the edges.
- In a large pot of boiling salted water, gently add the tortellini and cook for about 3-4 minutes or until they float to the surface.
- Remove with a slotted spoon and serve with additional parmesan cheese or a drizzle of olive oil.
