Ingredients

  • Almond flour - 100g
  • Cream cheese - 100g
  • Egg - 1 large
  • Spinach - 100g (fresh or frozen)
  • Ricotta cheese - 50g
  • Parmesan cheese - 30g (grated)
  • Garlic - 1 clove (minced)
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. In a mixing bowl, combine almond flour, cream cheese, egg, salt, and black pepper to form a dough. Knead until smooth.
  2. Cover the dough with plastic wrap and let it rest for 10 minutes.
  3. In a skillet, heat olive oil over medium heat, add minced garlic and sauté until fragrant.
  4. Add spinach to the skillet and cook until wilted (if fresh) or heated through (if frozen). Remove from heat.
  5. In a bowl, mix the cooked spinach, ricotta cheese, Parmesan cheese, and a pinch of nutmeg. Set aside.
  6. Roll out the rested dough on a parchment paper until thin (about 2mm thick). Cut into squares or circles (about 5cm in diameter).
  7. Place a small spoonful of the spinach filling in the center of each dough piece. Fold over to form a tortellini shape and seal the edges.
  8. In a large pot of boiling salted water, gently add the tortellini and cook for about 3-4 minutes or until they float to the surface.
  9. Remove with a slotted spoon and serve with additional parmesan cheese or a drizzle of olive oil.
