Ingredients
- Zucchini - 2 medium (about 400g)
- Ground beef (80% lean) - 250g
- Parmesan cheese - 30g, grated
- Almond flour - 30g
- Egg - 1 large
- Garlic - 2 cloves, minced
- Dried oregano - 1 tsp
- Dried basil - 1 tsp
- Salt - ½ tsp
- Black pepper - ¼ tsp
- Olive oil - 1 tbsp
- Crushed tomatoes - 400g (canned)
- Fresh basil - for garnish (optional)
Steps
- Spiralize the zucchini using a spiralizer to create 'noodles' and set aside.
- In a mixing bowl, combine ground beef, Parmesan cheese, almond flour, egg, minced garlic, oregano, basil, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 2.5 cm in diameter.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 8-10 minutes until browned on all sides and cooked through.
- Once the meatballs are cooked, remove them from the skillet and set aside.
- In the same skillet, add crushed tomatoes, bring to a simmer, and cook for 5 minutes. Add the meatballs back to the skillet and coat them in the sauce.
- While the sauce is simmering, cook the zucchini noodles in a separate pot of boiling water for 2-3 minutes until slightly tender but still firm.
- Drain the zucchini noodles and divide them into two bowls. Top with meatballs and marinara sauce. Garnish with fresh basil if desired.
