Ingredients

  • Zucchini - 2 medium (about 400g)
  • Ground beef (80% lean) - 250g
  • Parmesan cheese - 30g, grated
  • Almond flour - 30g
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 tsp
  • Dried basil - 1 tsp
  • Salt - ½ tsp
  • Black pepper - ¼ tsp
  • Olive oil - 1 tbsp
  • Crushed tomatoes - 400g (canned)
  • Fresh basil - for garnish (optional)

Steps

  1. Spiralize the zucchini using a spiralizer to create 'noodles' and set aside.
  2. In a mixing bowl, combine ground beef, Parmesan cheese, almond flour, egg, minced garlic, oregano, basil, salt, and pepper. Mix until well combined.
  3. Form the mixture into small meatballs, about 2.5 cm in diameter.
  4. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 8-10 minutes until browned on all sides and cooked through.
  5. Once the meatballs are cooked, remove them from the skillet and set aside.
  6. In the same skillet, add crushed tomatoes, bring to a simmer, and cook for 5 minutes. Add the meatballs back to the skillet and coat them in the sauce.
  7. While the sauce is simmering, cook the zucchini noodles in a separate pot of boiling water for 2-3 minutes until slightly tender but still firm.
  8. Drain the zucchini noodles and divide them into two bowls. Top with meatballs and marinara sauce. Garnish with fresh basil if desired.
