- Zucchini - 2 medium
- Fresh clams - 500 grams
- Olive oil - 4 tablespoons
- Garlic - 4 cloves, minced
- Red pepper flakes - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchinis into noodles using a spiralizer or a vegetable peeler. Set aside.
- In a large pot, bring salted water to a boil and add the clams. Cover and cook for about 5-7 minutes until the clams open. Discard any clams that do not open.
- Remove the cooked clams from the pot and set aside. Reserve about 1/2 cup of the clam cooking liquid.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- Add the spiralized zucchini noodles to the skillet and sauté for about 3-4 minutes until slightly softened.
- Pour in the reserved clam cooking liquid and lemon juice. Stir to combine and let it simmer for 2 minutes.
- Add the cooked clams to the skillet, season with salt and black pepper, and toss everything gently to combine.
