- Almond flour - 150 grams
- Cream cheese - 100 grams
- Egg - 1 large
- Spinach - 100 grams, fresh
- Ricotta cheese - 100 grams
- Parmesan cheese - 30 grams, grated
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Egg yolk - 1, for egg wash
Steps
- Preheat oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, cream cheese, egg, and salt. Mix until a dough forms.
- Knead the dough on a lightly almond flour-dusted surface until smooth. Wrap in plastic wrap and let it rest for 10 minutes.
- While the dough rests, sauté minced garlic in olive oil over medium heat until fragrant, about 1 minute.
- Add fresh spinach to the pan and cook until wilted. Remove from heat and let cool slightly.
- In a separate bowl, combine cooked spinach, ricotta cheese, Parmesan cheese, black pepper, and mix well.
- Roll out the dough thinly, about 2-3 mm thick, and cut into squares (about 7 cm).
- Place a teaspoon of the spinach and cheese mixture in the center of each dough square.
- Fold the squares over to form a triangle, pressing the edges to seal. Use a fork to crimp the edges for extra security.
- Place the ravioli on a baking sheet lined with parchment paper. Brush the tops with egg yolk.
- Bake in the preheated oven for 20 minutes or until golden brown.
- Serve warm with a drizzle of olive oil or your favorite low-carb marinara sauce.
