Ingredients

  • Almond flour - 150 grams
  • Cream cheese - 100 grams
  • Egg - 1 large
  • Spinach - 100 grams, fresh
  • Ricotta cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg yolk - 1, for egg wash

Steps

  1. Preheat oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, cream cheese, egg, and salt. Mix until a dough forms.
  3. Knead the dough on a lightly almond flour-dusted surface until smooth. Wrap in plastic wrap and let it rest for 10 minutes.
  4. While the dough rests, sauté minced garlic in olive oil over medium heat until fragrant, about 1 minute.
  5. Add fresh spinach to the pan and cook until wilted. Remove from heat and let cool slightly.
  6. In a separate bowl, combine cooked spinach, ricotta cheese, Parmesan cheese, black pepper, and mix well.
  7. Roll out the dough thinly, about 2-3 mm thick, and cut into squares (about 7 cm).
  8. Place a teaspoon of the spinach and cheese mixture in the center of each dough square.
  9. Fold the squares over to form a triangle, pressing the edges to seal. Use a fork to crimp the edges for extra security.
  10. Place the ravioli on a baking sheet lined with parchment paper. Brush the tops with egg yolk.
  11. Bake in the preheated oven for 20 minutes or until golden brown.
  12. Serve warm with a drizzle of olive oil or your favorite low-carb marinara sauce.
