Ingredients
- Almond flour - 200 grams
- Eggs - 2 large
- Ricotta cheese - 250 grams
- Parmesan cheese - 50 grams, grated
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Spinach - 50 grams, cooked and chopped
Steps
- In a mixing bowl, combine almond flour and salt. Add 1 egg and mix until a dough forms. If the dough is too dry, add a little water, a teaspoon at a time.
- Knead the dough on a clean surface for a couple of minutes until smooth. Wrap in plastic wrap and let it rest for 10 minutes.
- In another bowl, mix ricotta cheese, Parmesan cheese, chopped basil, cooked spinach, and black pepper until well combined.
- Roll out the dough between two sheets of parchment paper until it's about 2-3 mm thick.
- Cut out circles of dough using a round cookie cutter or glass, about 7-8 cm in diameter.
- Place a teaspoon of the ricotta filling in the center of each circle. Moisten the edges with water and fold the dough over to create a half-moon shape. Seal the edges by pressing them together.
- In a large pot, bring salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes or until they float to the top.
- In a skillet, heat olive oil and sauté minced garlic until fragrant. Add cooked ravioli and toss gently to coat.
- Serve hot, garnished with extra basil and grated Parmesan if desired.
