Ingredients

  • Almond flour - 200 grams
  • Eggs - 2 large
  • Ricotta cheese - 250 grams
  • Parmesan cheese - 50 grams, grated
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Spinach - 50 grams, cooked and chopped

Steps

  1. In a mixing bowl, combine almond flour and salt. Add 1 egg and mix until a dough forms. If the dough is too dry, add a little water, a teaspoon at a time.
  2. Knead the dough on a clean surface for a couple of minutes until smooth. Wrap in plastic wrap and let it rest for 10 minutes.
  3. In another bowl, mix ricotta cheese, Parmesan cheese, chopped basil, cooked spinach, and black pepper until well combined.
  4. Roll out the dough between two sheets of parchment paper until it's about 2-3 mm thick.
  5. Cut out circles of dough using a round cookie cutter or glass, about 7-8 cm in diameter.
  6. Place a teaspoon of the ricotta filling in the center of each circle. Moisten the edges with water and fold the dough over to create a half-moon shape. Seal the edges by pressing them together.
  7. In a large pot, bring salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes or until they float to the top.
  8. In a skillet, heat olive oil and sauté minced garlic until fragrant. Add cooked ravioli and toss gently to coat.
  9. Serve hot, garnished with extra basil and grated Parmesan if desired.
