- Zucchini - 2 medium, spiralized

- Anchovy fillets - 4, chopped
- Crushed red pepper flakes - 1/2 teaspoon
- Canned crushed tomatoes - 400 grams
- Kalamata olives - 100 grams, pitted and halved
- Capers - 2 tablespoons, rinsed and drained
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and chopped anchovies to the skillet, sautéing until fragrant, about 1-2 minutes.
- Stir in the crushed red pepper flakes and cook for another minute.
- Pour in the canned crushed tomatoes, stirring to combine, and let simmer for 10-12 minutes until slightly thickened.
- Add the Kalamata olives and capers to the tomato sauce, stirring well and cooking for an additional 5 minutes.
- While the sauce is simmering, prepare the zucchini noodles by spiralizing the zucchini into noodles.
- Once the sauce is ready, season with salt and black pepper to taste.
- In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
- Serve the zucchini noodles topped with the puttanesca sauce and garnish with fresh parsley.
