Ingredients

  • Zucchini - 2 medium, spiralized
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Anchovy fillets - 4, chopped
  • Crushed red pepper flakes - 1/2 teaspoon
  • Canned crushed tomatoes - 400 grams
  • Kalamata olives - 100 grams, pitted and halved
  • Capers - 2 tablespoons, rinsed and drained
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and chopped anchovies to the skillet, sautéing until fragrant, about 1-2 minutes.
  3. Stir in the crushed red pepper flakes and cook for another minute.
  4. Pour in the canned crushed tomatoes, stirring to combine, and let simmer for 10-12 minutes until slightly thickened.
  5. Add the Kalamata olives and capers to the tomato sauce, stirring well and cooking for an additional 5 minutes.
  6. While the sauce is simmering, prepare the zucchini noodles by spiralizing the zucchini into noodles.
  7. Once the sauce is ready, season with salt and black pepper to taste.
  8. In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
  9. Serve the zucchini noodles topped with the puttanesca sauce and garnish with fresh parsley.
