Ingredients

  • Almond flour - 150g
  • Psyllium husk - 1 tablespoon
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Pecorino Romano cheese - 50g, finely grated
  • Black pepper - 1 teaspoon, freshly cracked
  • Olive oil - 1 tablespoon
  • Water - 2 tablespoons, as needed

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, and salt. Mix well.
  2. Add the egg to the dry ingredients and mix until a dough forms. If the dough is too dry, add water, one tablespoon at a time, until it reaches a pliable consistency.
  3. Knead the dough on a clean surface for about 2 minutes until smooth. Let it rest for 5 minutes.
  4. Divide the dough into small pieces and roll each piece into long, thin strands (about 1/4 inch thick) to create the pici pasta.
  5. Bring a pot of salted water to a boil. Carefully add the pici and cook for 5-7 minutes or until they float to the top and are tender.
  6. While the pasta cooks, heat the olive oil in a pan over medium heat. Add the freshly cracked black pepper and toast it for about 30 seconds.
  7. Once the pasta is cooked, reserve 1/4 cup of the pasta water and drain the rest.
  8. Add the drained pasta to the pan with the black pepper and olive oil, then gradually stir in the reserved pasta water and Pecorino Romano cheese until a creamy sauce forms.
  9. Toss the pasta to combine everything well and serve immediately, garnished with additional cheese and black pepper if desired.
