- Psyllium husk - 1 tablespoon
- Egg - 1 large
- Salt - 1/2 teaspoon
- Pecorino Romano cheese - 50g, finely grated
- Black pepper - 1 teaspoon, freshly cracked
- Olive oil - 1 tablespoon
- Water - 2 tablespoons, as needed
Steps
- In a mixing bowl, combine almond flour, psyllium husk, and salt. Mix well.
- Add the egg to the dry ingredients and mix until a dough forms. If the dough is too dry, add water, one tablespoon at a time, until it reaches a pliable consistency.
- Knead the dough on a clean surface for about 2 minutes until smooth. Let it rest for 5 minutes.
- Divide the dough into small pieces and roll each piece into long, thin strands (about 1/4 inch thick) to create the pici pasta.
- Bring a pot of salted water to a boil. Carefully add the pici and cook for 5-7 minutes or until they float to the top and are tender.
- While the pasta cooks, heat the olive oil in a pan over medium heat. Add the freshly cracked black pepper and toast it for about 30 seconds.
- Once the pasta is cooked, reserve 1/4 cup of the pasta water and drain the rest.
- Add the drained pasta to the pan with the black pepper and olive oil, then gradually stir in the reserved pasta water and Pecorino Romano cheese until a creamy sauce forms.
- Toss the pasta to combine everything well and serve immediately, garnished with additional cheese and black pepper if desired.
