Ingredients

  • Zucchini - 2 medium-sized (about 400g)
  • Fresh basil leaves - 50g
  • Pine nuts - 30g
  • Parmesan cheese - 30g, grated
  • Garlic - 1 clove
  • Olive oil - 60ml
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Using a spiralizer, spiralize the zucchini into zoodles and set aside.
  2. In a food processor, combine the fresh basil leaves, pine nuts, garlic, and grated Parmesan cheese.
  3. Pulse the mixture while slowly drizzling in the olive oil until a smooth pesto forms. Season with salt and pepper to taste.
  4. In a large skillet, heat a little olive oil over medium heat. Add the zoodles and sauté for 2-3 minutes until just tender, but still al dente.
  5. Remove the skillet from heat and add the pesto to the zoodles, tossing to combine until well coated.
  6. Serve immediately, garnished with additional Parmesan cheese and pine nuts if desired.
