- Zucchini - 2 medium-sized (about 400g)
- Fresh basil leaves - 50g
- Pine nuts - 30g
- Parmesan cheese - 30g, grated
- Garlic - 1 clove
- Olive oil - 60ml

- Pepper - to taste
Steps
- Using a spiralizer, spiralize the zucchini into zoodles and set aside.
- In a food processor, combine the fresh basil leaves, pine nuts, garlic, and grated Parmesan cheese.
- Pulse the mixture while slowly drizzling in the olive oil until a smooth pesto forms. Season with salt and pepper to taste.
- In a large skillet, heat a little olive oil over medium heat. Add the zoodles and sauté for 2-3 minutes until just tender, but still al dente.
- Remove the skillet from heat and add the pesto to the zoodles, tossing to combine until well coated.
- Serve immediately, garnished with additional Parmesan cheese and pine nuts if desired.
