Ingredients

  • Zucchini - 2 medium
  • Fresh basil leaves - 50 grams
  • Pine nuts - 30 grams
  • Garlic - 1 clove
  • Parmesan cheese, grated - 30 grams
  • Olive oil - 60 ml
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Using a spiralizer, create zucchini noodles from the two medium zucchinis and set aside.
  2. In a food processor, combine the fresh basil leaves, pine nuts, garlic, and Parmesan cheese.
  3. While processing, slowly drizzle in the olive oil until the mixture is smooth and well combined.
  4. Season the pesto with salt and pepper to taste.
  5. In a large skillet over medium heat, add the zucchini noodles and sauté for 3-4 minutes until just tender.
  6. Remove from heat and toss the zucchini noodles with the prepared pesto until evenly coated.
