Ingredients

  • Zucchini - 2 medium (about 400g)
  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 400g
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Ricotta cheese - 100g
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds, sprinkle with a little salt, and let it sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry with a paper towel. Arrange them on a baking sheet, drizzle with 1 tablespoon of olive oil, and roast in the oven for 20 minutes until golden and tender.
  4. While the eggplant is roasting, spiralize the zucchinis into noodles using a spiralizer or a vegetable peeler.
  5. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  6. Add the canned diced tomatoes, oregano, salt, and black pepper to the skillet. Simmer for 10 minutes to allow the sauce to thicken.
  7. Add the zucchini noodles to the skillet and cook for an additional 3-5 minutes until the noodles are tender but still firm.
  8. Serve the zucchini noodles topped with roasted eggplant slices and dollops of ricotta cheese. Garnish with fresh basil.
