- Zucchini - 2 medium (approximately 400g)
- Ground beef - 250g
- Olive oil - 2 tablespoons
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Carrot - 1 small, finely diced
- Celery - 1 stalk, finely diced
- Canned crushed tomatoes - 200g
- Tomato paste - 1 tablespoon
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30g, grated (for serving)
Steps
- Using a spiralizer or vegetable peeler, create pappardelle-like noodles from the zucchini. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, cooking until softened, about 5-7 minutes.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the canned crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Reduce heat to low and let simmer for 15-20 minutes, stirring occasionally.
- While the sauce simmers, in a separate pot, lightly sauté the zucchini noodles in a bit of olive oil over medium heat for about 3-5 minutes until slightly tender. Season with a pinch of salt.
- To serve, place the zucchini pappardelle on plates and top with the ragu sauce. Sprinkle with grated Parmesan cheese before enjoying.
