- Red pepper flakes - 1/2 teaspoon (optional)
- White wine - 100 ml (dry, optional for keto)
- Fresh parsley - 2 tablespoons (chopped)
- Lemon - 1 (juiced)
- Salt - to taste
- Black pepper - to taste
Steps
- Begin by cleaning the clams thoroughly under cold running water, scrubbing the shells to remove any sand or grit.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- If using, add the red pepper flakes and stir for another 30 seconds.
- Pour in the white wine and increase the heat to medium-high. Let it simmer for 2-3 minutes to reduce slightly.
- Add the cleaned clams to the skillet. Cover and cook for about 5-7 minutes, or until the clams have opened. Discard any that do not open.
- While the clams are cooking, spiralize the zucchini into linguine. You can also use a box grater if you don't have a spiralizer.
- Once the clams are cooked, add the zucchini linguine to the skillet, tossing gently to combine. Cook for an additional 2-3 minutes until the zucchini is just tender.
- Remove from heat, and stir in the fresh parsley, lemon juice, salt, and black pepper to taste.
- Serve immediately, garnished with additional parsley if desired.
