  • Zucchini - 2 medium (spiralized into linguine)
  • Fresh clams - 500 grams (cleaned)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves (minced)
  • Red pepper flakes - 1/2 teaspoon (optional)
  • White wine - 100 ml (dry, optional for keto)
  • Fresh parsley - 2 tablespoons (chopped)
  • Lemon - 1 (juiced)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by cleaning the clams thoroughly under cold running water, scrubbing the shells to remove any sand or grit.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. If using, add the red pepper flakes and stir for another 30 seconds.
  4. Pour in the white wine and increase the heat to medium-high. Let it simmer for 2-3 minutes to reduce slightly.
  5. Add the cleaned clams to the skillet. Cover and cook for about 5-7 minutes, or until the clams have opened. Discard any that do not open.
  6. While the clams are cooking, spiralize the zucchini into linguine. You can also use a box grater if you don't have a spiralizer.
  7. Once the clams are cooked, add the zucchini linguine to the skillet, tossing gently to combine. Cook for an additional 2-3 minutes until the zucchini is just tender.
