Ingredients

  • Zucchini - 2 medium
  • Ricotta cheese - 250 grams
  • Fresh spinach - 100 grams
  • Shredded mozzarella cheese - 100 grams
  • Grated Parmesan cheese - 30 grams
  • Marinara sauce (sugar-free) - 200 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Slice the zucchini lengthwise into thin strips using a mandoline or sharp knife to create 'noodles'.
  3. Sprinkle salt on the zucchini strips and let them sit for 10 minutes to draw out moisture. Pat dry with paper towels.
  4. In a mixing bowl, combine ricotta cheese, spinach (chopped), half of the mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Take a zucchini strip, place a generous spoonful of the cheese mixture at one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with the remaining zucchini strips and filling.
  7. Once all roll-ups are in the dish, pour the remaining marinara sauce over the top and sprinkle with the remaining mozzarella cheese.
  8. Drizzle olive oil over the dish and cover with aluminum foil.
  9. Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
