Ingredients
- Zucchini - 2 medium
- Ricotta cheese - 250 grams
- Fresh spinach - 100 grams
- Shredded mozzarella cheese - 100 grams
- Grated Parmesan cheese - 30 grams
- Marinara sauce (sugar-free) - 200 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Italian seasoning - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- Slice the zucchini lengthwise into thin strips using a mandoline or sharp knife to create 'noodles'.
- Sprinkle salt on the zucchini strips and let them sit for 10 minutes to draw out moisture. Pat dry with paper towels.
- In a mixing bowl, combine ricotta cheese, spinach (chopped), half of the mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Take a zucchini strip, place a generous spoonful of the cheese mixture at one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with the remaining zucchini strips and filling.
- Once all roll-ups are in the dish, pour the remaining marinara sauce over the top and sprinkle with the remaining mozzarella cheese.
- Drizzle olive oil over the dish and cover with aluminum foil.
- Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
