Ingredients

  • Cauliflower - 400 grams, riced
  • Almond flour - 100 grams
  • Egg - 1 large
  • Parmesan cheese - 50 grams, grated
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Butter - 50 grams
  • Fresh sage leaves - 10 grams

Steps

  1. Steam the riced cauliflower for about 5-7 minutes until soft, then drain and let cool slightly.
  2. In a large bowl, combine the steamed cauliflower, almond flour, egg, grated Parmesan cheese, salt, and pepper. Mix until a dough forms.
  3. Transfer the dough to a floured surface and knead gently for a minute until it becomes smooth.
  4. Divide the dough into four equal parts. Roll each part into a long rope, about 1 cm thick, then cut into 2 cm pieces to form the gnocchi.
  5. Using a fork, gently press down on each piece to create ridges, which will help hold the sauce.
  6. Bring a large pot of salted water to a boil and carefully add the gnocchi. Cook for 2-3 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
  7. In a skillet, melt the butter over medium heat. Add the fresh sage leaves and cook for 2-3 minutes until the butter is golden and the sage is crispy.
  8. Add the cooked gnocchi to the skillet and toss gently to coat them in the sage butter.
  9. Serve warm, garnished with additional grated Parmesan if desired.
