- Cauliflower - 400 grams, riced
- Almond flour - 100 grams
- Egg - 1 large
- Parmesan cheese - 50 grams, grated
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Butter - 50 grams
- Fresh sage leaves - 10 grams
Steps
- Steam the riced cauliflower for about 5-7 minutes until soft, then drain and let cool slightly.
- In a large bowl, combine the steamed cauliflower, almond flour, egg, grated Parmesan cheese, salt, and pepper. Mix until a dough forms.
- Transfer the dough to a floured surface and knead gently for a minute until it becomes smooth.
- Divide the dough into four equal parts. Roll each part into a long rope, about 1 cm thick, then cut into 2 cm pieces to form the gnocchi.
- Using a fork, gently press down on each piece to create ridges, which will help hold the sauce.
- Bring a large pot of salted water to a boil and carefully add the gnocchi. Cook for 2-3 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
- In a skillet, melt the butter over medium heat. Add the fresh sage leaves and cook for 2-3 minutes until the butter is golden and the sage is crispy.
- Add the cooked gnocchi to the skillet and toss gently to coat them in the sage butter.
- Serve warm, garnished with additional grated Parmesan if desired.
