- Cauliflower - 300 grams, riced
- Almond flour - 60 grams
- Egg - 1 large
- Parmesan cheese - 30 grams, grated
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Butter - 50 grams
- Fresh sage leaves - 10 grams, chopped
Steps
- Steam the riced cauliflower until tender, about 5-7 minutes. Drain well and let it cool slightly.
- In a bowl, combine the steamed cauliflower, almond flour, egg, Parmesan cheese, salt, and black pepper. Mix until a dough forms.
- On a lightly floured surface, divide the dough into 4 portions. Roll each portion into a long rope about 1 cm thick, then cut into 2 cm pieces to form gnocchi.
- Bring a large pot of salted water to a boil. Gently add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped sage and cook for 2-3 minutes until the butter is fragrant and slightly browned.
- Add the cooked gnocchi to the skillet and toss gently to coat in the sage butter. Cook for an additional 2-3 minutes until heated through.
