  • Zucchini - 2 medium (about 400g)
  • Shrimp, peeled and deveined - 300g
  • Heavy cream - 120ml
  • Parmesan cheese, grated - 50g
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - for garnish

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles and set aside.
  2. In a large skillet, heat the olive oil and butter over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Add the shrimp to the skillet, season with salt and black pepper, and cook for 3-4 minutes until they turn pink and opaque.
  5. Remove the shrimp from the skillet and set aside, keeping the skillet on low heat.
  6. Pour the heavy cream into the skillet and bring it to a gentle simmer, stirring frequently.
  7. Add the grated Parmesan cheese to the cream, stirring until the cheese is melted and the sauce is smooth.
