Ingredients

  • Zucchini - 2 medium (about 400g)
  • Cherry tomatoes - 200g, halved
  • Fresh mozzarella balls - 125g, halved
  • Fresh basil leaves - 15g, roughly chopped
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Using a spiralizer, create zoodles from the zucchini and set aside.
  2. In a large skillet over medium heat, add olive oil and minced garlic, sautéing until fragrant, about 1 minute.
  3. Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the zucchini noodles and season with salt and black pepper, cooking for an additional 3-4 minutes until the zoodles are tender but not mushy.
  5. Remove the skillet from heat and fold in the fresh mozzarella and basil leaves.
  6. Drizzle balsamic vinegar over the dish, mix gently, and serve immediately.
