Ingredients

  • Zucchini - 2 medium
  • Ground beef - 250 grams
  • Ricotta cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Mozzarella cheese - 100 grams, shredded
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Tomato sauce - 100 ml (sugar-free)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the zucchini lengthwise into thin strips (about 5mm thick) using a mandoline or sharp knife. Sprinkle with salt and let them sit for 10 minutes to draw out moisture.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add the ground beef to the skillet, breaking it apart and cooking until browned. Season with Italian seasoning, salt, and black pepper.
  5. In a bowl, mix cooked ground beef, ricotta cheese, egg, and half of the grated Parmesan cheese until well combined.
  6. Rinse the zucchini slices and pat them dry with paper towels. Lay a slice on a flat surface, place about 2 tablespoons of the meat mixture at one end, and roll it up tightly. Repeat for all zucchini slices.
  7. Spread a thin layer of tomato sauce on the bottom of a baking dish. Place the zucchini rolls seam-side down in the dish.
  8. Top the rolls with the remaining tomato sauce and sprinkle the shredded mozzarella and remaining Parmesan cheese over the top.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Remove from the oven and let it cool for a few minutes before serving.
