- Zucchini - 2 medium
- Ground beef - 250 grams
- Ricotta cheese - 100 grams
- Parmesan cheese - 30 grams, grated
- Mozzarella cheese - 100 grams, shredded
- Egg - 1 large
- Garlic - 2 cloves, minced
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Tomato sauce - 100 ml (sugar-free)
Steps
- Preheat the oven to 180°C (350°F).
- Slice the zucchini lengthwise into thin strips (about 5mm thick) using a mandoline or sharp knife. Sprinkle with salt and let them sit for 10 minutes to draw out moisture.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the ground beef to the skillet, breaking it apart and cooking until browned. Season with Italian seasoning, salt, and black pepper.
- In a bowl, mix cooked ground beef, ricotta cheese, egg, and half of the grated Parmesan cheese until well combined.
- Rinse the zucchini slices and pat them dry with paper towels. Lay a slice on a flat surface, place about 2 tablespoons of the meat mixture at one end, and roll it up tightly. Repeat for all zucchini slices.
- Spread a thin layer of tomato sauce on the bottom of a baking dish. Place the zucchini rolls seam-side down in the dish.
- Top the rolls with the remaining tomato sauce and sprinkle the shredded mozzarella and remaining Parmesan cheese over the top.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before serving.
