Ingredients

  • Ground beef (80/20) - 250 grams
  • Zucchini - 2 medium-sized
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Carrot - 1 small, finely chopped
  • Celery - 1 stalk, finely chopped
  • Canned crushed tomatoes - 400 grams
  • Tomato paste - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - for serving (optional)

Steps

  1. Using a spiralizer, turn the zucchini into noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes.
  5. Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper. Mix well and bring to a simmer.
  6. Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
  7. While the sauce simmers, in a separate pan, lightly sauté the zucchini noodles over medium heat for about 3-5 minutes until just tender.
  8. Serve the Bolognese sauce over the zucchini noodles, garnishing with grated Parmesan cheese if desired.
