Ingredients
- Ground beef (80/20) - 250 grams
- Zucchini - 2 medium-sized
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Carrot - 1 small, finely chopped
- Celery - 1 stalk, finely chopped
- Canned crushed tomatoes - 400 grams
- Tomato paste - 1 tablespoon
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - for serving (optional)
Steps
- Using a spiralizer, turn the zucchini into noodles and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper. Mix well and bring to a simmer.
- Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
- While the sauce simmers, in a separate pan, lightly sauté the zucchini noodles over medium heat for about 3-5 minutes until just tender.
- Serve the Bolognese sauce over the zucchini noodles, garnishing with grated Parmesan cheese if desired.
