- 2 large bell peppers
- 300 grams Italian sausage (bulk, removed from casings)
- 100 grams cauliflower rice
- 50 grams diced tomatoes (canned, drained)
- 50 grams shredded mozzarella cheese
- 30 grams grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- Salt - to taste
- Pepper - to taste
- 1 tablespoon olive oil
- Fresh basil leaves - for garnish
Steps
- Preheat your oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them upright in a baking dish.
- In a skillet over medium heat, add the Italian sausage and cook until browned, breaking it apart with a spoon.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in the cauliflower rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until the mixture is heated through.
- Remove from heat and mix in the mozzarella and Parmesan cheese, reserving a little of each for topping.
- Stuff the bell peppers with the sausage mixture, packing it tightly.
- Sprinkle the reserved mozzarella and Parmesan cheese on top of the stuffed peppers.
- Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and lightly browned.
- Let cool for a few minutes, garnish with fresh basil leaves, and serve warm.
