Ingredients

  • Large eggs - 4
  • Arugula - 100 grams
  • Cherry tomatoes - 100 grams
  • Pitted black olives - 50 grams
  • Extra virgin olive oil - 2 tablespoons
  • White wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, shaved

Steps

  1. Place the eggs in a pot and cover them with water. Bring to a boil over medium heat.
  2. Once boiling, cover the pot, turn off the heat, and let the eggs sit for 10-12 minutes.
  3. While the eggs are cooking, rinse the arugula and cherry tomatoes. Halve the cherry tomatoes.
  4. After the eggs have finished cooking, transfer them to an ice bath to cool for a few minutes before peeling.
  5. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and black pepper to create the dressing.
  6. In a large mixing bowl, combine the arugula, cherry tomatoes, and black olives.
  7. Slice the peeled eggs and add them to the salad mixture.
  8. Drizzle the dressing over the salad and gently toss to combine.
  9. Serve immediately, garnished with shaved Parmesan cheese.
