- Parmesan cheese - 30 grams, shaved
Steps
- Place the eggs in a pot and cover them with water. Bring to a boil over medium heat.
- Once boiling, cover the pot, turn off the heat, and let the eggs sit for 10-12 minutes.
- While the eggs are cooking, rinse the arugula and cherry tomatoes. Halve the cherry tomatoes.
- After the eggs have finished cooking, transfer them to an ice bath to cool for a few minutes before peeling.
- In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and black pepper to create the dressing.
- In a large mixing bowl, combine the arugula, cherry tomatoes, and black olives.
- Slice the peeled eggs and add them to the salad mixture.
