Ingredients
- Basmati rice - 150 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 small, diced
- Red bell pepper - 1/2, diced
- Black olives - 50 grams, pitted and sliced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then cook it in a pot with 300 ml of water. Bring it to a boil, then reduce to a simmer, cover, and cook for about 15-18 minutes or until the water is absorbed and the rice is tender.
- Once the rice is cooked, remove it from heat and let it cool for about 10 minutes. Fluff the rice with a fork to separate the grains.
- In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, sliced black olives, and chopped parsley.
- Add the cooled rice to the bowl with the vegetables and mix gently.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
- Pour the dressing over the rice and vegetable mixture, stirring gently to combine all ingredients thoroughly.
- Taste and adjust seasoning if necessary, then cover the bowl and refrigerate for about 15 minutes to allow the flavors to meld.
- Serve the Insalata di Riso chilled or at room temperature.
