Ingredients

  • Basmati rice - 150 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Red bell pepper - 1/2, diced
  • Black olives - 50 grams, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then cook it in a pot with 300 ml of water. Bring it to a boil, then reduce to a simmer, cover, and cook for about 15-18 minutes or until the water is absorbed and the rice is tender.
  2. Once the rice is cooked, remove it from heat and let it cool for about 10 minutes. Fluff the rice with a fork to separate the grains.
  3. In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, sliced black olives, and chopped parsley.
  4. Add the cooled rice to the bowl with the vegetables and mix gently.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
  6. Pour the dressing over the rice and vegetable mixture, stirring gently to combine all ingredients thoroughly.
  7. Taste and adjust seasoning if necessary, then cover the bowl and refrigerate for about 15 minutes to allow the flavors to meld.
