  • 30 grams black olives, pitted and sliced
  • 2 tablespoons capers, rinsed
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Wash the new potatoes thoroughly and place them in a pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until fork-tender.
  2. Once cooked, drain the potatoes and let them cool slightly. Cut them into bite-sized pieces.
  3. In a large mixing bowl, combine the halved cherry tomatoes, sliced red onion, diced cucumber, sliced black olives, and capers.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the dressing.
