- 30 grams black olives, pitted and sliced
- 2 tablespoons capers, rinsed
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Wash the new potatoes thoroughly and place them in a pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until fork-tender.
- Once cooked, drain the potatoes and let them cool slightly. Cut them into bite-sized pieces.
- In a large mixing bowl, combine the halved cherry tomatoes, sliced red onion, diced cucumber, sliced black olives, and capers.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the dressing.
- Add the warm potato pieces to the vegetable mixture and pour the dressing over the top. Gently toss everything together until well combined.
