- Celery - 2 stalks, diced
- Artichoke hearts - 150 grams, canned, drained and chopped
- Black olives - 50 grams, pitted and sliced
- Capers - 1 tablespoon, rinsed
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 3 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Start by soaking the nori seaweed in warm water for about 5 minutes until it becomes soft. Drain and chop it into small pieces.
- In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, thinly sliced red onion, diced celery, chopped artichoke hearts, sliced black olives, and rinsed capers.
- Add the chopped nori seaweed to the bowl with the vegetables.
