  • Fresh parsley - 30 grams, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by cleaning the mussels under cold water, scrubbing the shells to remove any debris.
  2. In a large pot, bring water to a boil. Add the cleaned mussels and cook for about 5-7 minutes until they open. Discard any that do not open.
  3. In a separate pot, bring water to a boil and add the calamari. Cook for 2-3 minutes until they turn opaque. Drain and set aside.
  4. In the same pot, add the shrimp and cook for 2-3 minutes until they are pink and opaque. Drain and set aside with the calamari.
  5. In a large mixing bowl, combine the cooked mussels, shrimp, calamari, cherry tomatoes, cucumber, red onion, and parsley.
  6. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
  7. Pour the dressing over the seafood mixture and toss gently to combine.
  8. Allow the salad to marinate in the refrigerator for 10-15 minutes before serving to let the flavors meld.
