Steps
- Start by cleaning the mussels under cold water, scrubbing the shells to remove any debris.
- In a large pot, bring water to a boil. Add the cleaned mussels and cook for about 5-7 minutes until they open. Discard any that do not open.
- In a separate pot, bring water to a boil and add the calamari. Cook for 2-3 minutes until they turn opaque. Drain and set aside.
- In the same pot, add the shrimp and cook for 2-3 minutes until they are pink and opaque. Drain and set aside with the calamari.
- In a large mixing bowl, combine the cooked mussels, shrimp, calamari, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
- Pour the dressing over the seafood mixture and toss gently to combine.
- Allow the salad to marinate in the refrigerator for 10-15 minutes before serving to let the flavors meld.
