- Buckwheat - 100 grams
- Cherry tomatoes - 200 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Feta cheese - 50 grams, crumbled
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the buckwheat under cold water and cook it in boiling salted water for about 15 minutes or until tender. Drain and let it cool.
- While the buckwheat is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely chop the red onion and parsley.
- In a large bowl, combine the cooked and cooled buckwheat, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and toss gently to combine all the ingredients.
- Top with crumbled feta cheese and serve chilled or at room temperature.
