Ingredients

  • Buckwheat - 100 grams
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the buckwheat under cold water and cook it in boiling salted water for about 15 minutes or until tender. Drain and let it cool.
  2. While the buckwheat is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely chop the red onion and parsley.
  3. In a large bowl, combine the cooked and cooled buckwheat, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients.
  6. Top with crumbled feta cheese and serve chilled or at room temperature.
