Ingredients

  • Fresh parsley - 20 grams, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the farro under cold water and then cook it in a pot of boiling water for about 25 minutes until tender. Drain and set aside to cool.
  2. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, and finely chopped red onion.
  3. Once the farro has cooled, add it to the bowl with the vegetables.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
  5. Pour the dressing over the farro and vegetable mixture, then add the chopped parsley. Toss everything together until well combined.
