Ingredients

  • Green beans - 200 grams
  • Cherry tomatoes - 150 grams
  • Red onion - 1 small, thinly sliced
  • Fresh basil leaves - 10 grams, roughly chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Bring a pot of salted water to a boil and add the green beans. Blanch for 3-4 minutes until tender yet crisp.
  2. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain again.
  3. In a large bowl, combine the blanched green beans, cherry tomatoes (halved), sliced red onion, and chopped basil.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to make the dressing.
  5. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if needed.
  6. Serve immediately or let it chill in the refrigerator for 15 minutes to enhance flavors.
