Ingredients

  • Roma tomatoes - 4 medium
  • Fresh mozzarella cheese - 200 grams
  • Fresh basil leaves - 10 leaves
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the Roma tomatoes in half lengthwise and place them cut side up on a baking dish.
  3. Drizzle the tomatoes with 1 tablespoon of olive oil and season with salt, black pepper, and garlic powder.
  4. Bake the tomatoes in the preheated oven for 15 minutes until they are softened.
  5. While the tomatoes are baking, slice the fresh mozzarella cheese into thick rounds.
  6. Remove the tomatoes from the oven and place a slice of mozzarella cheese on top of each tomato half.
  7. Return the baking dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Remove the dish from the oven and drizzle with balsamic vinegar and the remaining tablespoon of olive oil.
  9. Garnish with fresh basil leaves before serving.
