Ingredients

  • Ground beef (grass-fed) - 400 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Truffle oil - 1 tablespoon
  • Mushrooms (finely chopped) - 100 grams
  • Olive oil - 1 tablespoon
  • Zucchini (for buns, sliced into thick rounds) - 2 medium
  • Arugula - 1 cup
  • Cherry tomatoes (halved) - 100 grams
  • Balsamic vinegar - 1 tablespoon

Steps

  1. In a bowl, combine ground beef, salt, black pepper, chopped parsley, minced garlic, and half of the truffle oil. Mix well until fully incorporated.
  2. Divide the beef mixture into two equal portions and shape them into patties, about 2 cm thick.
  3. Preheat a grill or skillet over medium-high heat and add olive oil.
  4. Cook the patties for about 4-5 minutes on each side or until they reach your desired doneness.
  5. While the patties are cooking, heat a separate pan over medium heat and add the chopped mushrooms. Sauté until they are soft and browned, about 5 minutes.
  6. Remove the patties from the heat and top each with sautéed mushrooms and a drizzle of the remaining truffle oil.
  7. In the same pan, grill the zucchini rounds for 2-3 minutes on each side until slightly tender and charred.
  8. To assemble, place a zucchini round on a plate, add the burger patty with mushrooms, and top with arugula and halved cherry tomatoes. Drizzle with balsamic vinegar and serve.
