- 400g fresh salmon fillet, skinless and boneless

- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 small egg
- 50g almond flour
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
- 2 medium zucchinis, spiralized (for zoodle salad)
- 100g cherry tomatoes, halved
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste (for salad)
Steps
- In a food processor, pulse the salmon fillet until it is finely chopped but not pureed.
- In a mixing bowl, combine the chopped salmon, minced garlic, dill, parsley, lemon juice, egg, almond flour, salt, and pepper. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, add the salmon patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, prepare the zoodle salad by combining the spiralized zucchini, cherry tomatoes, balsamic vinegar, salt, and pepper in a mixing bowl. Toss gently to combine.
- Serve the salmon patties hot, accompanied by the zoodle salad.
