Ingredients

  • 400g fresh salmon fillet, skinless and boneless
  • 1 small garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 small egg
  • 50g almond flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)
  • 2 medium zucchinis, spiralized (for zoodle salad)
  • 100g cherry tomatoes, halved
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste (for salad)

Steps

  1. In a food processor, pulse the salmon fillet until it is finely chopped but not pureed.
  2. In a mixing bowl, combine the chopped salmon, minced garlic, dill, parsley, lemon juice, egg, almond flour, salt, and pepper. Mix until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, add the salmon patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, prepare the zoodle salad by combining the spiralized zucchini, cherry tomatoes, balsamic vinegar, salt, and pepper in a mixing bowl. Toss gently to combine.
  6. Serve the salmon patties hot, accompanied by the zoodle salad.
